A piece on marinating includes a couple of my recipes. It's written by Karin Welzel for the Pittsburg Tribune-Review. I might add, not all marinades need acid. Soy Sauce and Fish Sauce aren't acidic, but they're powerful tenderizers. It's all about breaking down proteins. Science perhaps I'll leave to Harold McGee!

AP reprinted a version of my Steak Asado recipe on May 9th -- it's been reprinted in lots of newspapers.

Burlignton Free Press food writer, Melissa Pasanan, adapts one of my recipes for her April 29 article on grilling steak. I find the piece confusing. The Lime-Tequila Marinade she reprints is adapted from my book but it appears alongside an Emerald Steak Sauce I've never seen in my life. Oh well.
